Colada is the Cuban version of espresso. It is created by mixing brown sugar with a espresso and features a sugary-sweet, creamy foam called espuma. Traditionally it is served in small Styrofoam cups and drunk in one shot. Remember, Cuban Coffee is meant to be shared. The recipe below serves 6.
Fill your moka pot’s brewing basket with dark-roasted ground Cuban coffee. Add water to the chamber and tamp the coffee (not too much). Place your moka pot on the stove on medium heat.
Prepare the brown sugar mixture by combining the brown sugar with the first coffee drops from your moka pot. Add the sugar mixture to the coffee and beat until it dissolves. A foamy, beige color should form on the top.
Pour the coffee into small cups and share immediately with friends.
